Those of you who have had the pleasure of sharing breakfast with us have surely have enjoyed our signature Rivertown Inn muffins. For the first time, we are sharing our now not-so-secret, healthy, whole-grain and fruit recipe: Enjoy!
Rivertown Inn Muffins
1 c ground flax seed
1 c whole wheat flour (pastry)
1 c oat bran or wheat germ
½ c brown sugar
2 t baking soda
1 t baking powder
½ t salt
2 T Cinnamon
1 ½ c finely shredded carrots
3 apples peeled, cored and shredded ( can use applesauce, 1-cup)
¾ c dried fruit
3 egg whites lightly beaten
1 T vanilla
Procedure:
Mix dry ingredients together. Add shredded carrots, apples, chopped dry fruit, egg whites, vanilla, and mix. The apples and egg whites should provide enough moisture, but if more is needed, add some milk.
We use a mini non-stick muffin pan, with a little baking spray to help release them.
Bake at 350 for 30-40 min.
